Peaches, Peaches, Peaches

My kitchen counters are covered with fat, yummy peaches!  Though I could probably eat about 10 a day, Leif begged for some muffins this morning, so in went the peaches.

Peach-Ginger Muffins
2 1/2 cups all-purpose flour (I used 1 1/2 cups all-purpose flour and 1 cup multi-grain flour)
2 tsp. baking soda
2 tsp cinnamon
¼ tsp salt
3 large Peaches cut into small chunks
½ cup walnuts – chopped
½ cup raisins
¼ cup unsweetened coconut flakes
1 cup candied ginger chunks – diced
1 ¼ cups maple syrup
3 eggs
1 cup apple sauce
2 tsp vanilla extract

Preheat the over to 350, and grease muffin tin (or use muffin cups).
Into a large bowl, sift flour, baking soda, cinnamon, and salt.  Mix well.  Add shredded peaches, chopped walnuts, raisins, coconut, candied ginger, and mix well.
In a separate bowl, whisk maple syrup, eggs, applesauce, and vanilla.  Add to flour mixture, stirring until combined.
Pour batter into muffin tins ¾ full and bake 15 minutes.
Cools muffins in the tins for 5 minutes before taking out of pan to complete cooling.
Keep muffins in an airtight container.
Makes ~24 muffins.
