Herbed Figs

Man! I am on a canning roll! Look out, or I might just stuff you in a jar and plop you in the hot water bath!

Here’s the recipe I used for tonight’s extravaganza. It was given to me by a friend.

Herbed Figs

  • ~20 ripe figs, quartered
  • 1 Tbsp. water
  • 2 tsp. sugar (raw or brown)
  • pinch of Thyme (dry or fresh)
  • Juice of 1/4 lemon

Place all of the ingredients in a pan and simmer until juicy. Put figs and juices in a jelly jar leaving 1/2 inch of room at the top. Boil for 5 minutes in a water bath. Makes ~4 8-oz jars. Mmmmmmm!

  1. That is something I would love to taste! I am going to be canning your soup recipe soon. I was thinking of doing a caramel apple jam that sounded good. Are you doing applesauce?

  2. I’m not sure if I’ll do apple sauce…. probably…
    Kaia and I are going apple picking on Monday at an organic place ~30 minutes north of here. If I get enough, I’m hoping to do some apple butter, spiced canned apples, dried apples, maybe apple sauce (with cinnamon!)… as much as I can!! I wonder if there are any good recipes of apple soups out there?

    Those figs sound awesome. I live about an hour south of Nashville, and I don’t know anyone with a fig tree. Here we are southern zone 7, Memphis, where I used to live was zone 8 and some people had fig trees there. I guess what I’m getting at is do you grow your own?

  4. My mother-in-law has a tree that just had a second flush of figs, so she brought me a bag full. I think she has Brown Turkey figs (which grown in zone 7 without a problem). We can buy them here at the store, but they are really expensive.
